Bailey’s Chocolate Pudding

This is another recipe for Spoon VT when my “15 Ways to Booze Up Your Chocolate” article comes out for chocolate day. Look out for it around October 28th!

Try out this adult chocolate pudding when it gets really chilly outside. It’ll warm you up both from the temperature and with the alcohol.

Recipe:

Ingredients

  • 1/2 cup sugar
  • 1/3 cup unsweetened cocoa
  • 3 tablespoons cornstarch
  • 2 cups milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons cream liqueur

Instructions:

  1. In a microwave-safe bowl, whisk together the sugar, cocoa and cornstarch. Whisk in milk a little at a time so the mixture doesn’t have any dry lumps.4
  2. Place in the microwave, and cook for 3 minutes on high. Stir, then cook at 1 minute intervals, stirring between cooking times for 2 to 4 minutes, or until shiny and thick. Stir in vanilla and liqueur.
  3. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming, and chill in the refrigerator. Serve cold.
